The Categories global settings should already have been created (Analyst comes with some defaults) see System Settings > Categories. The Category Names of Region and Sector are displayed as a default, So to apply Region and Sector classifications for this new property click in the area under Value to open a drop down menu of the globally created list. Click to select and click OK.
